Coeur du Bray

 An authentic French Neufchâtel cheese, which is famously produced in a traditional heart shape. This soft, mold-ripened cheese has a rich history and a distinct salty, mushroomy flavor. 

  • Type: A soft, slightly crumbly, mold-ripened cheese (similar to Camembert).
  • Origin: Produced in the Neufchâtel-en-Bray region of Normandy, France. It is an AOC cheese, ensuring its authenticity.
  • Milk Source: Made from cow's milk.
  • Flavor Profile: It has a salty, tangy flavor with notes of mushrooms, a nutty taste, and a characteristic bloomy rind. As it ages, its flavor becomes fuller-bodied.
  • Texture: The center remains relatively firm and flaky when young, becoming silkier and softer towards the edges as it matures.
  • Historical Significance: The heart shape is linked to a legend from the Hundred Years' War, where French farm girls gave heart-shaped cheeses to English soldiers as a sign of affection.
